The Story of Emerson

Back in the mid-1800s, a man named Luther Emerson eked out a living on the western edge of our upland pasture. The last evidence of him and his family there was in 1860 — what remains of his hard work now are the remnants of stone foundations, and the name of one of the prettiest spots on our farm: the Emerson Meadow.

Fast forward more than a hundred and fifty years, and Seth (the farmer) took Kate (the farmer’s wife) to the Emerson Meadow on their first date. Hook, line, sinker.

Creamy and bright, with a lovely lactic tang, Emerson is right on the line between spreadable and crumbly, which is what makes it so perfect for everything.
